Ageing : 1 – 3 years
Winemaking : Harvested at night or very early in the morning. The bunches are neither destemmed nor crushed, but gently and progressively pressed, so as not to crush the grapes and to obtain the highest-quality juice possible. The juices are clarified by natural sedimentation in the cold, followed by settling before fermentation. The temperature is kept between 13 and 14°C to preserve fresh fruit aromas. The cuvée is vinified and aged in temperature-controlled stainless steel tanks.
Serve at : 10 – 12°C
Serve with : Perfect as an aperitif, this wine can also be served with starters or dishes where vegetables are the main focus. Vegetables can be spiced up with selected, mild spices, such as a massale-type curry or ras el hanout, with a hint of coriander and aniseed that will complement the wine perfectly. A perfect match with semi-mature goat’s cheese.
