TASTING NOTES:
Intense clear cherry colour, with purple nuances. Very expressive and complex on the nose, with licorice, coffee and cocoa smells. Aeration reveals well-matured red and black fruits (strawberry, blackberry) with a subtile kirsch hint. Full bodied and velvety on the palate, it develops the same cocoa and spice aromas with delicate black fruit flavours. The finish is long, with fine-grained tannins, a delicate cocoa bitterness, all well balanced by a smooth acidity. This a strong and ample wine, with a good aging-capacity.

80% Black Grenache, 20% Shiraz
AGING:
Can be drunk within the year if you’d like to, but it would be even better if you wait one to 8 more years to open it.
WINEMAKING:
We combine traditional methods with modern technology, handcrafting qualitative wines which reflect our terroir. We believe in minimal intervention: we are here to create the best conditions to let the grapes express their true character and to keep these conditions from the harvest to the bottling. Here the winemaking process takes 15 to 20 days, during which qualitative colour, aromas and texture molecules are gently and progressively extracted. Fermentation temperature is meticulously monitored and stays around 26°C (79°F), with the same purpose of keeping a delicate profile. Maturing will last roughly 10 months, in concrete tanks.

16-18°C (61-64°F)
PAIRING SUGGESTIONS:
Perfect with red meat and giblets. Examples of pairing: Grilled lamb ribs, leg of lamb, sheep sausages with roasted sweet potatoes.
