Description
Ageing : 5 – 8 years
Winemaking process : Traditional winemaking in concrete and stainless steel vats, with a short vatting period of around 15-20 days and a gentle, gradual, controlled extraction to obtain a high-quality wine. The temperature does not exceed 27°C. The wine is aged exclusively in concrete vats to preserve its crisp, fresh fruitiness and soft structure, which do not require aging in wood.
Serving temperature : 16 – 18°C
Serve with : Red meat or offal dishes. Examples: rib of beef, veal liver, black pudding with apples, grilled leg of lamb or lamb chops, pan-fried mutton sausages, and sweet potatoes.
