Description
Ageing : 1 – 6 years
Winemaking : Harvested at night or very early in the morning. The bunches are neither destemmed nor crushed but gently and progressively pressed to avoid crushing the grapes and to obtain the highest quality juice possible. The juice is clarified by natural sedimentation in the cold, followed by settling before fermentation. The temperature is maintained between 13 and 14°C to preserve fresh fruit aromas. 20% of the cuvée is matured in double barrels, while the remaining 80% is aged in stainless steel tanks.
Serving temperature : 10 – 12°C
Serve with : This wine is best served with fish, such as fish in beurre blanc sauce, shellfish, or white meats like blanquette de veau. It also pairs perfectly with exotic dishes, such as haddock fillet with Thai sauce and crunchy vegetables.
