Bright white gold colour, with silver shades. Intense and gourmand nose, with white fruits smells like white peach and pear, with a tinge of white blossoms. It’s a delicate and fresh nose.
Full-bodied on the palate, with the same aromas as those found on the nose, underlined by a hint of minerality. A great vivacity gives to this corpulent wine a nice balance. Finish is long, on floral flavours with a lemon-like acidity.

Roussanne, Viognier, Grenache blanc, in equal parts (1/3 each).

Can be drunk within the year or kept 1 to 4 more years.

We combine traditional methods with modern technology, handcrafting qualitative wines which reflect our terroir. We believe in minimal intervention; we are here to create the best conditions to let the grapes express their true character and to keep these conditions from the harvest to the bottling. Here the grapes are harvested very early in the morning, so they are at an optimal temperature. Grapes are put right away in the press, and undergo a soft and progressive pressing, in order to obtain the most clear and qualitative must. After a cold settling, must is ready for fermentation. Fermentation temperature is meticulously monitored and stays around 13-14°C (52-55°F) during the whole process. Then the wine is matured on lees for several months. 20% of the cuvée is matured in a 5hL oak barrel, and 80% in stainless steel tanks. Finally, the finished wine is racked, gently filtered and bottled.

This white wine will be perfect with fish, like a white grilled fish with a white butter sauce, shellfish, or white meat (good pairing with a veal blanquette. It can also work as an aperitive, with cocktail shrimps or lemon and smoke salmon served on blinis.
