TASTING NOTES:
Intense clear ruby colour, first nose on crispy red and black fruits, from raspberry to perfectly matured cherry. After aeration, the second nose brings some cocoa smell, beautifully associated with a tinge of soft spices (licorice, cinnamon). Full bodied and velvety on the palate, it develops the same fruit aromas and some soft roasting flavours. The full-bodied sensation is perfectly balanced by silky tannins and a pleasant acidity. The finish is long, again on freshness and red fruits. It’s an elegant dry wine.t.
VARIETIES:
80% Black Grenache, 20% Shiraz
AGING:
Can be drunk within the year if you’d like to, but you can also let it age more, from 1 to 8 years.
WINEMAKING:
We combine traditional methods with modern technology, handcrafting qualitative wines which reflect our terroir. We believe in minimal intervention: we are here to create the best conditions to let the grapes express their true character and to keep these conditions from the harvest to the bottling. Here the winemaking process takes 15 to 20 days, during which qualitative colour, aromas and texture molecules are gently and progressively extracted. Fermentation temperature is meticulously monitored and stays around 26°C (79°F), with the same purpose of keeping a delicate profile. Maturing will last roughly 10 months, in concrete tanks.

PAIRING SUGGESTIONS:
Grilled lamb ribs, flank steak with red wine sauce. It also perfectly pairs with chocolate dessert, such as a dark chocolate fondant, with a fresh raspberry sauce.
