VINTAGE: 2018

TASTING NOTE:
Bright and clear appearance, with pale salmon nuances. Pronounced and seductive smell, with citrus (grapefruit, tangerine) and passion fruit aromas. Then you can smell vine peach aromas, with a hint of orange blossom. Dry yet medium-bodied, with a lemon-like acidity, this wine is smooth and refreshing on the palate. Aromas are intense and similar to the ones found on the nose. The finish is long, with a beautiful persistency of fruit flavours and acidity.

VARIETIES:
Black Grenache (80%), Shiraz (15%), White Grenache/Roussanne/Viognier (5%)

AGING:
Meant to be drunk within the year.

WINEMAKING:
We combine traditional methods with modern technology, handcrafting qualitative wines which reflect our terroir. We believe in minimal intervention; we are here to create the best conditions to let the grapes express their true character and to keep these conditions from the harvest to the bottling. Here the grapes are harvested very early in the morning, so they are at an optimal temperature. This rosé is made by direct pressing, and we only use the free run wines and the first press juice to elaborate this cuvee. A cold settling is done the day after, in order to obtain a pale bright colour, intense fruity flavors and to eliminate bitter components. Fermentation temperature is meticulously monitored and stays around 13-14°C (52-55°F) during the whole process. Then, the finished wine is stored for a short period of time, and finally gently filtered and bottled.

SERVING TEMPERATURE:
50 to 54°F

PAIRING SUGGESTIONS:
Perfect on its own for your summer evenings, it can also be served with sweet and sour food, and shellfish such as crab and shrimp. It also goes well with certain Asian food, such as sweet and sour Chinese dishes or Japanese makis and sushis. And why not with dessert?

New cuvee, made in very low quantities for its first year (1200 btls!). Gold medal won at 2019 “Elle à Table” magazine wine contest.
